8 cups cauliflowerets
5 cloves garlic, minced
1 tablespoon butter
2 tablespoons reduced sodium chicken broth
1/8 teaspoon salt
1/8 teaspoon pepper

DIRECTIONS
Place cauliflower in a steamer basket. Place in a saucepan over 1 in. of water; bring to a boil. Cover and steam for 9-11 minutes or until crisp-tender.
Meanwhile, in a small nonstick skillet, saute garlic in butter for about 2 minutes or until tender. Stir in broth. Drain cauliflower and transfer to a serving bowl. Pour butter mixture over cauliflower. Sprinkle with salt and pepper; toss to coat evenly. Serve immediately.

Nutritional Analysis: 3/4 cup equals 38 calories, 2 g fat (1 g saturated fat), 4 mg cholesterol, 76 mg sodium, 5 g carbohydrate, 3 g fiber, 2 g protein. Diabetic Exchanges: 1 vegetable, 1/2 fat.

I'm not a big cauliflower fan, but I couldn't get enough of this stuff! I scaled it all the way back to 2 servings and used frozen cauliflower florets. I just steamed those in the microwave for a few minutes, then added them to the butter mixture in the skillet and let them simmer while the rest of the meal finished cooking. Thanks!

Thanks Teri Anne! I had some cauliflower and was looking for a cauliflower dish without so many calories, this was perfect! The only changes I made were a little red pepper flakes and I didn't want to open a whole box of broth so I mixed a little of a bouillon cube with water. Thanks again!

Didn't really care for it. The garlic and broth gave it a little flavor (very little). Cauliflower was just too bland.
