MY BEST recipes are from friends and family. This one came from my aunt - I learned to cook by watching and helping her. I have so many family favorites that I created my own cookbook. I print it out, illustrate and annotate it to give new brides. It is always well received and treasured. -Patty Kile, Greentown, Pennsylvania

Traditional potato salad gets fun flavor from sweet pickles and a hearty crunch from celery and radishes in this recipe. I'm especially fond of the creamy dressing. --Ellen Benninger, Stoneboro, Pennsylvania

Part of the goodness of these fork-smashed potatoes is their simplicity. Warm potatoes get the fork treatment, as they're smashed up with eggs, dill pickles, mayo, and salt.

This is a wonderful variation on an American summertime standby. Since Idaho is the potato state and a lot of apples are also grown here, I thought this would be an excellent recipe to represent my area.

Mayonnaise dressing, a bit of onion, celery and hard cooked eggs are added, and a few things to give it a kick - prepared mustard, celery and garlic salt, and pickle relish, of course.

What 's nice about this potato salad is that there is not one taste - except perhaps the potatoes - that dominates. There are smidgens and sprinkles of lots of ingredients like parsley, shredded carrot, pimentos and white onion. They all play their part in making the dressing and the salad taste sensational.
