INGREDIENTS
1 large onion, chopped
2 tablespoons olive or canola oil
1 1/2 cups uncooked long grain rice
3 garlic cloves, minced
2 1/2 cups vegetable broth
1 1/2 cups sliced carrots
1 1/2 cups frozen cut green beans, thawed
1 medium sweet red pepper, julienned
1 medium zucchini, quartered lengthwise and cut into 1/2 inch slices
1 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon ground turmeric
1/8 teaspoon paprika
1 (14 ounce) can water-packed artichoke hearts, drained and quartered
2 plum tomatoes, seeded and chopped
1 cup frozen peas, thawed
1 cup frozen corn, thawed

DIRECTIONS
In a large nonstick skillet, saute onion in oil for 2 minutes. Add rice and garlic; saute 1 minute longer. Add the next nine ingredients; mix well. Bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until liquid is absorbed and rice is tender. Stir in the artichoke hearts, tomatoes, peas and corn; heat through.

Nutritional Analysis: One serving (1-2/3 cups) equals 359 calories, 6 g fat (1 g saturated fat), 0 cholesterol, 1,254 mg sodium, 68 g carbohydrate, 8 g fiber, 11 g protein. Diabetic Exchanges: 3 starch, 3 vegetable, 1 fat.

I served this to company and they truly enjoyed it. I used fresh thyme and any tomatoes I had on hand. I found it took longer than specified for the rice to be cooked and no longer "crunchy". I would definitely make this again.

Excellent! I added some oregano and sliced fresh tomatoes on top then grated cheddar cheese over it and stuck in the oven for 15 min. AMAZING! Mmmmm

This was really good. I added some veggie ground round in it and served it at a vegetarian dinner for non-vegetarians. It went over really well! I will be making this one again.

I couldn't get the rice to work properly and the flavors just didn't turn out the way that I wanted. Won't make this again.

Mild base flavors allow each individual vegetable to come through in the final dish. I made this more or less as written, using fresh green beans, heirloom tomatoes and marinated artichokes rather than plain artichoke hearts in water. The tomatoes and marinated artichokes both made nice punchy flavor notes.

This recipe was really easy and very delicious. I found I needed lots of extra water and around 20 more minutes to cook. I added in Safron and cumin but aside from that I pretty much kept recipe as is. I thought I had made way to much but when I went to the pot to put away the entire pan had been emptied! I highly recommend this dish

Fantastic recipe... you can even substitute various vegetables like I did and it will turn out wonderfully. I didn't have everything listed on hand, so I omitted the carrots, zucchini, artichoke hearts, and peas. Instead, I added serrano peppers, cayenne chili peppers, and frozen black-eyed peas. I also substituted a can of Mexican corn for frozen corn, and cherry tomatoes for plum. Oh, and add black pepper, unsalted butter, & Old Bay seasoning to the rice. SO GOOD!!

Eh, nothing special. If you're looking for something healthy to eat, it's a good dish; definitely doesn't wow me. And it's certainly not a "paella"...where's the saffron? Saffron probably would make this a more exciting dish. Like another reviewer said, it took me longer than 30 min for the rice to cook through. It also seemed to make much more than six servings. This was easy to make but probably wouldn't do again.
