This is very good. I used one whole onion, chopped, 4 cloves garlic, minced, and sauteed them in olive oil before adding the tomatoes. I did not peel the tomatoes, but I did remove as much of the seeds as I could. I also added basil. Since I do not have a food mill, I pureed the soup in the blender before adding to the roux. Delicious.

This was my first time making tomato soup from anything but a can, and it turned out great! and it was not complicated at all. I did not have a food processer or food mill or anything like it, so I just used a regular sive/ strainer with really tiny holes. I doubled the recipe and added one whole red onion cut in half and in addition to the cloves I added 1 - 2 cloves of garlic (depending on how you like garlic) I followed the directions in the recipe on what to do and when. Also when making the roux mixture I added a cup of milk to the roux heated until thickened a little and added it into the tomato liquid after straining the tomatos (and I did not peel or seed the tomatos and I had no problem) I did not have any basil but I did add oregano and it tasted fantastic! and not to mention my 1 1/2 year old son and 3 year old daughter finished the bowl of soup I gave them. This recipe is a keeper. As I said we doubled the recipe and two adults and two little ones almost finished it off.

This is an amazing recipe! It is very forgiving if I don't have all ingredients on hand and still is always delicious. I like to serve it with grilled cheese sandwiches.

Really delicious, and also healthy! I tried substituting chicken broth for vegetable broth the second time I made it (cause I was having a vegetarian friend over) but it just wasn't the same so definitely stick with chicken broth.
