INGREDIENTS

  • 3/4 cup butter, softened
  • 3 ounces cream cheese
  • 1 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • assorted colors of paste food coloring
  • 12 lollipop sticks

DIRECTIONS

  1. In a bowl cream butter, cream cheese and sugar until fluffy. Add egg and vanilla; beat until smooth
  2. In a medium bowl combine flour, baking powder and salt. Add dry ingredients to the creamed mixture. Stir till soft dough forms. Divide dough into fourths. Tint each with a different food color. Wrap in plastic wrap and chill for 2 hours.
  3. Preheat oven to 350 degrees F (175 degrees C). Working with each color, shape dough into 3/4 inch balls. For each cookie place 1 pink, 1 green, 1 blue and 1 orange ball together to make 1 large rainbow colored ball. Shape into a 12 inch long roll (like a snake); starting at one end, coil roll to make a 2 3/4 inch round cookie. Place cookies 3 inches apart on lightly greased baking sheet. Carefully insert lollipop sticks into bottoms of cookie
  4. Bake cookies for 8 minutes or until lightly browned. Cool and store in an airtight container.

Excellent Excellent Excellent! I made this for my daugher's class for her birthday and then turned around and made it for my sons class for his birthday the following week. Very easy and so cute! The second batch I made was for a preschool class so I added a broken pretzel rod in place of the popsicle sticks. (easier for them to hold plus it made the whole thing edible) So glad I found this recipe! It sure made my life easier with 2 birthdays back to back. It quickly went into my favorite recipe box.

Excellent recipe! I used an 8 oz. package of cream cheese and modified the amount of the rest of the ingredients to make the dough. Turned out great. Used regular food coloring (didn't have any paste), and we (my kids and my nephews) made cookies for Mother's Day. Lots of fun, kids can get really creative w/ this dough. We didn't use sticks, just rolled into dime size balls, or multi colored ropes, and made designs. Will make again and again! Thanks for the recipe!

My kids and I had lots of fun making these cookies. We ended up making two batches and passing some out as Easter treats to friends & family. To make them more Easter-like we used pastel colors, and wrapped the cookies up in cute Easter gift bags with ribbons. I followed the advise of others and added about 1/4 C more sugar so that they were sweet enough, and cooked the cookies for almost 12 minutes long so that they were not too soft. I also added lemon extract instead of vanilla, because I like the flavor better.
