Directions

  1. In a small bowl, mix together softened Neufchatel cheese and crushed pineapple.
  2. Spread 1/4 of the pineapple and cheese mixture on a slice of bread. Top with a tablespoon of almonds, and cover with another slice of bread to make a sandwich. repeat with remaining ingredients.

A perfect little sandwich for a tea party...and the leftover filling on toasted homemade bread makes a delicious breakfast the next day!

This was simple and good but I think adding a touch of brown sugar to the cream cheese mixture would make it great. I'll try that next time.
