This is a great recipe!! I love how it is predominately fruit! I used organic apples (as the conventionally grown variety rates high with pesticide residues) and increased the amount to 6 cups, substituted brown sugar for the white, increased raisins to 2 cups, utilized slivered almonds for the nuts, increased eggs (organic, cage free, & brown) to 3 to make sure the mixture held together with the additional fruit, a combo of grapeseed & canola oil, increased vanilla to 1 T, completely swapped out the flour for 100% Trader Joe's white whole wheat, and increased the cinnamon to 1 T. I definitely will make again! Yum-o!

Sooo good! Very moist! I used 1/2 brown and 1/2 white sugar and I shredded the apples using my food processor- turned out great!

I tried to reduce the yield to 6 muffins as it was just for a mate and I. I reduced all ingredients by a third, excepting the eggs, of course, which I reduced by half. For some reason the batter was way too thick. I added a splash (not specific, I know) of milk to moisten and then baked according to the recipe and they turned out fine. I wonder if thick batter is a problem in the usual recipe? If so, a bit of milk to get the right consistency is a suitable remedy.

These were more moist and the flavor had really developed by the following day. I used dried cranberries in place of the raisins. Excellent pretty much sums them up!!

Excellent muffins, TONS of fruit! I didn't use nuts since I brought them to a group with a lot of little kids, but these muffins went fast!

Great! I used 1 c A.P flour and 1 c whole wheat, also used dates instead of raisins. Talk about a hearty muffin! They're delicious & moist. Thanks!

Nice n'easy: in place of the raisins/nuts, I chopped up 3 cups of Kirkland's Fruit Medley (has mixture of nuts & dried mangos/kiwi/strawbrry's/etc...) and came out excellent!

I love that there is so much apple in the recipe. Turns out more like a bunch of apples and nuts held together by a little bit of muffin. I replaced the oil with margarine and it came out fine.
