Fruit 'N' Cheese Salad

"Sweet dressing, tart grapefruit sections, toasted walnuts and pungent blue cheese come together in this unusual salad from Fred Peterson of Peterson's Groves and Nursery in Vero Beach, Florida. The recipe showcases one of the citrus fruits he and his brother, Ed, grow in Indian River County."

8 cups torn salad greens
3 grapefruit, peeled and sectioned
1 cup halved seedless red grapes
3/4 cup crumbled blue cheese
1/2 cup thinly sliced red onion
1/4 cup chopped walnuts, toasted
1/4 cup cider or red wine vinegar
2 tablespoons olive or vegetable oil
2 tablespoons honey
1 tablespoon Dijon mustard
1/4 teaspoon salt

DIRECTIONS
In a large bowl, combine greens, fruit, cheese, onion and nuts if desired. In a small bowl, whisk vinegar, oil, honey, mustard and salt if desired. Pour over salad and toss to coat.

Nutritional Analysis: One 1/2-cup serving (prepared without walnuts and salt) equals 126 calories, 195 mg sodium, 8 mg cholesterol, 16 gm carbohydrate, 4 gm protein, 6 gm fat. Diabetic Exchanges: 1 fruit, 1 fat, 1/2 meat.

This salad is fabulous! I've become known as "the salad girl" among a group of friends that gets together for dinner every few weeks. After looking for a new recipe to mix it up, I made this salad for our last dinner, and we all loved it! The dressing is tangy and really goes well with the cheese. But, for me, it's the contrast between the sweet grapes and tart grapefruit that makes it!

Had a grapefruit to use up and happy I used it on this recipe! Only change was subbed sugar for honey. The sweet, tart and cheese with nuts is a winning combo of flavor and texture. I can see us having this often, its a nice change up from rasberry version.

Wow! This salad had so much flavor. The grapefruit was really good, and the blue cheese added a great contrast of flavor. It didn't taste like a green salad or a fruit salad. It was completely different. Thanks for the recipe.
