Original Recipe Yield 1 -9x5x3 inch loaf
 

Ingredients

  • 3 eggs
  • 1 cup white sugar
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup flaked coconut
  • 1/2 cup candied cherries, chopped
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5x3 inch loaf pan.
  2. In a large bowl beat eggs until frothy. Add sugar and oil. Beat to blend. Stir in milk, vanilla, and carrot.
  3. In another bowl, combine flour, baking powder, soda, cinnamon, salt, coconut, cherries, raisins, and walnuts. Mix well to combine evenly. Pour all at once over batter. Stir to moisten. Turn into greased 9x5x3 inch loaf pan.
  4. Bake at 350 degrees F (175 degrees C) for 1 hour until it tests done. Cool 10 minutes. Remove from pan. Cool and wrap.
