This was wonderful. I had to make several changes based on what I can actually buy here in Japan. I whipped cream instead of using Cool Whip and I made my own caramel sauce (used grandma ople's apple pie caramel sauce recipe halved). I served it as dessert with friends and everyone thought it was great. Next time I will dry toast the nuts to omit the butter. I think it will still taste great with a fewer calories.

Aweome pie!! I took it to a Super Bowl party, and there was none left. I did change a few things though. I added the caramel to the Cool Whip mix..so there would be a more uniform taste. Then I added a layer of Cool Whip mixture to the crust...then a layer of coconut...then Cool whip, and topped it off with remaining coconut mixture. Then drizzled a very small amount of caramel over the top. Yum!

I haven't even made this yet, but this was incredible!! My mother in law made this the other day, as she had gotten the recipe from her daughter. This makes enough filling to do 2 ready made crusts, but you have to do more of the coconut/pecan mix for them. Or it can make one 9 inch glass deep dish make your own crust, as she had done! This way makes for a bigger, deeper nicer looking pie!! I am going to be making this this weekend, as we didn't get a big enough piece this weekend!! LOL

Awesome pie!! Super easy and everyone LOVES it. My husband got very protective of it when I mentioned bringing it to a Sunday School potluck. I've made it twice, following the recipe exactly, but next time I'm going to try a 12oz container of cool whip (I don't think they sell 16oz containers like it calls for) and make my own graham cracker crust in a 9x13. The two round pie crusts get pretty messy once you get the filling, caramel topping, and coconut/pecan stuff on top, and I think it'd be easier to transport/store in a 9x13.

Wonderful!! I've made this recipe twice now, and can't keep up with the complements!! Very versatile recipe, but be careful-it's very rich and decadent!!
