INGREDIENTS
1 cup shortening
2 cups sugar
4 eggs
2 teaspoons vanilla extract
3 1/2 cups all-purpose flour
1 cup baking cocoa
2 teaspoons baking soda
1 teaspoon salt
FROSTING:
3 cups confectioners' sugar
1/3 cup baking cocoa
1/3 cup butter or margarine, softened
1/4 teaspoon almond extract
3 tablespoons milk

DIRECTIONS
In a large mixing bowl, cream shortening and sugar. add eggs, one at a time, beating well after each addition. beat in vanilla. combine the flour, cocoa, baking soda and salt; gradually add to creamed mixture.
Roll into 1-1/2-in. balls. Place 2 in. apart on ungreased baking sheets. Bake at 350 degrees F for 13-16 minutes or until set. Remove to wire racks to cool.
For frosting, in a mixing bowl, combine the confectioners' sugar, cocoa, butter and extract. Add enough milk to achieve spreading consistency. Frost cooled cookies.

These are okay. They recipe says it makes 21 cookies. 21 large cookies. I changed the recipe to 30 cookies and using my cookie scoop made about 5 dozen. I ran out of cocoa so I didn't get a chance to try the frosting, I ran out of cocoa powder--but I don't recommend store bought it made these cookies to rich and sweet.

Four Plus Stars. Don't you dare skip the frosting on these. It DOES make the cookie, so don't skip it! (But, SIFT the powdered sugar and cocoa!!!) * I cut the sugar in the cookies to 1 3/4 cup * These don't spread out much, so make 'em a touch bigger and flatten them a bit when putting 'em on the sheet before baking.

Simple cake like textured cookies...that is, until you add the frosting and then they are soooo good. Nice and soft. Made 1/2 a batch and got 2 dozen cookies. Be careful not to overdue the almond if making a 1/2 batch like I did.

excellent cookies! i didn't make the frosting, though. also, i only used 1-3/4 cups of sugar, but i prefer cookies that are less sweet. next time i will also add a bit of cayenne pepper.
