1/2 cup butter (no substitutes), softened
1 cup sugar
1 egg
1/2 cup sour cream
1 teaspoon vanilla extract
3 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
FROSTING:
1/4 cup cold milk
3 tablespoons instant vanilla pudding mix
1/4 cup butter (no substitutes), softened
2 1/2 cups confectioners' sugar
1 teaspoon vanilla extract
Food coloring

DIRECTIONS
In a mixing bowl, cream butter and sugar. Beat in egg, sour cream and vanilla. Combine flour, baking soda and salt; gradually add to creamed mixture. Cover and chill for 1 hour or until easy to handle.
On a work surface that has been sprinkled heavily with confectioners' sugar, roll out dough to 1/8-in. thickness. Cut with a 2-1/2-in. cookie cutters. Place 1 in. apart on greased baking sheets. Bake at 375 degrees F for 8-10 minutes or until lightly browned. Immediately remove to wire racks to cool.
For frosting, combine milk and pudding mix until smooth; set aside. In a mixing bowl, cream butter. Beat in pudding mixture. Gradually add confectioners' sugar, vanilla and food coloring if desired; beat on high speed until light and fluffy. Frost cookies.

I sliced mine thick and it made a moist cookie. LOOOOOVed the frosting. So much better than the boring powdered sugar/milk combo. Thanks.

I was inspired by this recipe but I only had lemon flavored pudding so I grated some zest into the batter and added the rest of the box of pudding mix into the flour (omitting the remaining flour). The result was a soft, cakey, nicely subtle lemon cookie. I also use about a tsp of lemon juice in the frosting. The frosting is the best part of these cookies!! I can't wait until spring when I can make these for an Easter luncheon!

Very nice cookie and adaptable! Instead of using vanilla pudding mix I used chocolate, and followed a previous suggestion and added the extra pudding powder to the cookie. I ended up with a mildly flavored chocolate cookie and delicious chocolate frosting. I topped them off with off with "Andes Peppermint Crunch Baking Chips" Yummy! Thanks for the recipe.

Very easy recipe and fun for my toddler to make and cut out, but as far as flavor goes, just average. I had high hopes for the frosting too, but it was also kind of blah. Sorry.

This is an excellent cutout recipe! I rolled my cookies out a bit thicker, and baked them until they were just turning brown. They turned out just how I like them, cripsy on the outside and soft and chewy on the inside. The frosting was also delicious; the pudding gave it a unique taste. My only critique is that the frosting turned out a light yellowish color due to the food coloring in the pudding mix, and was hard to get the exact color frosting I wanted...Overall great recipe. Thanks!

Loved these cookies! I've been searching for a recipe that could match my husband's grandmother's rollout cookies and this did the trick. I had to hide them from him so I had some left for family! The frosting has a great flavor to it too.
