I found this recipe while checking out potato recipes (I love spuds, and Idaho spuds are the best!!) and thought I would rate it. :) I grew up on these leftover-potatoes-turned-to-hashbrowns whenever we had leftover boiled potatoes, which was fairly frequently (especially around the holidays!). They're awesome. We usually fried them in bacon grease (my parents always had a pot of it in the fridge, and now I keep a pot in my fridge! It gives such a nice added flavor to everything!) and the onions were rarely used. Salt and pepper are great, sometimes seasoning salt is nice too. Add bacon bits or cheese if desired, serve it with heated leftover gravy or maybe some sour cream... Absolutely marvelous. Thanks for reminding me what to do with my leftover potaotes with the holidays rapidly approaching! :)
