So simple yet so delicious! Used a store-bought crust. My only change was to add 1/2 tsp. of cinnamon to the flour mixture and to brush top crust with egg and sprinkle with cinnamon sugar. Will definitely make again and again!

This pie has basic ingredients but award winning flavor. I did ,however, brush the top crust with milk and sprinkle with sugar. My boyfriend and I enjoyed this pie very much. I look forward to making this super simple dessert again and again.

I double this recipe and put it in a rectangle dish. It has never failed and my family loves it! We also omit the butter and make a whole wheat pie crust from scratch to make this dish.

Made this yesterday and it was good plus super easy. Worked well to put the sugar/flour mix on the bottom and top instead of mixing it with the rhubarb. I would add a little more sugar next time. The butter is essential to keep the foaming down as it bakes. I put in red food color as another reader suggested, but I'll go easier on it next time as it was really red! I will use this recipe from now on. It is the best I have found.

Never made a pie before as I'm terrible at baking but I decided to give this a shot as I had some rhubarb and had guests over for Memorial Day. Recipe turned out fabulous and my guests were impressed! I followed the recipe exactly but next time I will cut out some of the sugar - I have a sweet tooth but this was even just a little too sweet for me, although my husband and my guests told me they wouldn't have changed a thing. I'm making this again over the weekend - simply delicious and SO easy.

Quick and easy! You gave us a winner here Carol. On the second success using this recipe I raised my rating to 5 stars from 4. This baby is a 5 star taste treat. My wife & the Dominican Sisters down the street loved the unique taste of this pie. I think I'll spend a little more time reading the other reviews they're great for picking up some pointers. Maybe someone has a suggestion on how to thickness of the sauce that the rhubarb produces.

This was so easy and absolutely delicious! I've always loved rhubarb pie but have never made one. My mom-in-law has it growing every year so picked some, cut it up in small pieces and used it for this pie. I only had 3 cups so used some over-ripe strawberries I had in the fridge to accomodate. I did follow the recipe exactly otherwise. I really thought it was going to come out disgusting but it was perfect and I will be making this again!

This pie is sooo good!!! I love the flavor and the crispy crust on the bottom is perfect. This was the first real pie i've ever made, and I feel like a pastry chef! My first one was last year. Now I make one every 2 weeks(in season) or when I can get to the farmers market!! I'm growing my own Rhubarb but it takes several years before you can harvest it!!!

I used only 2 c. Rhubarb and replaced the other 2 c. with fresh strawberries and used 1/3 c. less sugar. I also did an egg wash and sprinkled with sugar. This was FANTASTIC.

This is a very solid recipe but I did have crunchy sugar on the bottom crust. It definately is better the next day.

ELMIRA--I would recommend adding 3 cups starwberries and increasing sugar to 1 1/2 cups. If you add fewer than 3 cups, just adjust sugar slightly although there isn't much difference between 1 1/3 cups and 1 1/2 cups obviously.

Haven't tried this yet - but can't wait to!!! Does anyone have a suggestion as to how to modify this to add strawberries - not sure about the sweetness factor - should I lessen the amount of sugar??? Thanks!

Wonderful pie! However I did add some orange zest to the rhubarb because that was what my mother always did. It adds a very nice dimension to the rhubarb.
