EDIT: Since rhubarb is pretty pricey, I thought I'd add that about seven good-sized stalks makes four cups. Delicious and easy! I'd never had rhubarb pie, but my husband had enjoyed it growing up, so I tried this for his birthday. Make sure the rhubarb has a dark red color....otherwise it is likely not ripe enough.

It was ok, sweetness was perfect but I think the consistency was a little off... a little more flour perhaps, or that elusive egg! lol I will try it again and alter it a bit. Thanx!

Superb Pie!!! I did add sliced & slightly-sweetened strawberries, and made it in a deep-dish pie pan. My husband said even his mom had never made better rhubarb pie and she was a terrific cook.

I used this recipe yesterday to make my first ever rhubarb pie. I used refridgerated pie crusts(pillsbury) as I was in a hurry. Turned out very well. I think I may try just tad less sugar next time. Try using 1 c. verses the 1-1/3. Very quick and easy to make. My mom kept telling me I was nuts for not using an egg..she was impressed at how well it turned out. I will definatly make this again.

I won $100 for 1st prize in a rhubarb pie baking contest with this recipe. The only thing I did different, since I used green rhubarb, was tint the sugar with 2 drops of red food coloring before adding the flour. I also sprinkled a little sugar on top the crust. I used Pie Crust I from this site. Update 5/20/07 I won the rhubarb pie contest and the $100 prize again yesterday with this recipe. Since I made a 10 inch pie, I used 5 cups rhubarb, 1 2/3 cups sugar, 7 1/2 T flour, and 1 T butter. I added 3 drops red food color to the sugar. This pie is definitely a winner!

It doesn't get any easier or better than this. I used the crust from teh best apple pie recipe on this site, brushed on some softened butter and sprinkled with natural sugar for a pretty look. It came out perfect. I have had trouble with rhubarb pies coming out too runny, too sweet, or too sour. This one was perfect in every way!

I've never had rhubarb pie before and I was a bit reluctant to try it, but oh, this pie is to die for! I reduced the sugar to one cup, which seemed sweet enough for me, but I think that may have made the pie slightly juicier than it would otherwise have been. Still, my husband and I both loved it and could easily finish it all tonight if we let ourselves go!

I have been looking for a Rhubarb Pie recipe like my dad used to make when I was a child.Boy did I find one!! This pie is great & very easy to make.It's been about 25 yrs. since I tasted this pie,oh it brought back memories!You gotta try it!

A great rhubarb filling- not at all slimy, overly tart, or soupy. Right mix of ingredients. Don't be timid about putting the flour/sugar mixture on the top and bottom, it works wonderfully. Also, don't be afraid to use frozen rhubrarb- I did and it came out just right. I think I still need to find that "perfect" pie crust recipe, but at least I now have my rhubarb filling recipe. So easy!
