"Mildred Sherrer's comforting fruit crisp is a pared-down version of one her mother used to fix. 'I made it healthier by using reduced-fat margarine, fresh pears instead of canned and oats for some of the flour,' she explains from Fort Worth, Texas. As a finishing touch, she suggests topping it with fat-free yogurt or whipped cream."

1/2 cup all-purpose flour
1/3 cup quick-cooking oats
1/3 cup packed brown sugar
1 teaspoon ground cinnamon, divided
3 tablespoons reduced fat stick margarine*, cut into pieces
4 cups sliced peeled pears
2 tablespoons sugar
1 tablespoon lemon juice
1 teaspoon grated lemon peel
1/2 teaspoon ground ginger

DIRECTIONS
In a bowl, combine the flour, oats, brown sugar and 1/2 teaspoon cinnamon. Cut in margarine until coarse crumbs form; set aside. Place pears in a large bowl. Sprinkle with sugar, lemon juice, lemon peel, ginger and remaining cinnamon; toss to coat. Transfer to an 8-in. square baking dish coated with nonstick cooking spray. Sprinkle with crumb mixture. Bake at 350 degrees F for 45-50 minutes or until pears are tender.

This recipe was tested with Parkay Light stick margarine.
Nutritional Analysis: One serving equals 130 calories, 3 g fat (trace saturated fat), 0 cholesterol, 43 mg sodium, 28 g carbohydrate, 2 g fiber, 1 g protein. Diabetic Exchanges: 1 starch, 1 fruit.

This was very good and very easy, I've made it twice and it works as it is written. The second time I made it with a little extra sugar (extra tablespoon) and cinnamon (heaping teaspoon) which was perfect. I also tried fresh ginger instead of powder but did not like it as much, the ginger flavour was too pronounced.

I too added some apples to this recipe, stuck with almonds and oatmeal in the streusel and it was so delicious. Of course, I NEVER use margarine! Butter is better and better for you.

Great taste, but you have to bake the pears a really long time for them to soften up. I felt like the crumble got a little too dark because of it.

Yup, good. But I think you could double the pear and be fine. It was a little thin/shallow for my liking. Otherwise, taste was great.
