This salad is amazing! Even my husband enjoyed it and he usually only likes ranch dressings. I loved the flavor combination of the balsamic dressing and the pesto chicken. I ended up grilling my chicken for a lower fat content. I also cut my chicken into bite-sized strips verses shredding because I don't care for the texture of shredded chicken. I also misread the recipe and used 1/2 cup of pesto. Perhaps this is part of the reason it turned out so delicious! The only critique I have it for a new recipe title...Fresh chicken salad sounds so boring and bland! This salad is unique and needs an original name to complement it's wonderful flavors.

I thought this was a super yummy salad. The honey brings a nice little sweet flavor to it. When trying to have a good low calorie meal, this is a great choice!
