French Toast Apple Cobbler

  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, combine pie filling, raisins, lemon juice, one teaspoon of the vanilla, 1/2 teaspoon of the cinnamon and the salt.
  3. Spread mixture evenly in the bottom of a 3-quart rectangular baking dish.
  4. In a shallow dish whisk together eggs, milk, sugar, remaining 1/2 teaspoon of vanilla and remaining 1/4 teaspoon of cinnamon.
  5. Dip bread slices in egg mixture, turning to coat both sides.
  6. In a very large skillet, melt butter over medium heat. Add bread slices, half at a time, to hot skillet.
  7. Cook for 3 to 5 minutes or until bread is lightly browned, turning once to brown both sides.
  8. Arrange bread slices in a single layer atop apple mixture in dish.
  9. Bake, uncovered, for 20 to 25 minutes or until heated through.
  10. Cool slightly. Serve bread slices on serving plates and top with apple mixture.

Fantastic! My hubby and I loved it. Only thing I changed was I used real apples chopped up and added crumbled sausage.

This is a delicious recipe! My husband LOVED it. I have no doubt it's packed with calories, so not something I would make often but perfect as a specialty comfort breakfast. I couldn't find the Luckyleaf brand filling but any apple filling works. My bakery was out of the brioche so used fresh French bread instead. Turned out beautifully. The only change I may make next time is to reduce the sugar as I don't think its necessary.
