Fourth of July Layered Gelatin

Recipe by

"A hit with kids and those young at heart. My childhood neighbor made it our block party and now, even though I have moved far away, I still make it with fond memories...it just isn't Fourth of July without it! I have seen similar recipes where the white layer is made with sour cream or whipped topping, but this one uses sweetened condensed milk...easy and delicious!"

Directions

  1. Place cherry gelatin mix into a heatproof bowl, stir in 1 packet of unflavored gelatin, and mix with 2 cups of boiling water, stirring until the gelatin has dissolved and the mixture is clear, about 2 minutes. Pour into the bottom of a 9x13 rectangular glass baking dish. Place in refrigerator until completely cold and set, about 1 hour.
  2. Sprinkle 4 packets of unflavored gelatin onto 1 cup of boiling water in a heatproof bowl, allow to stand for about 3 minutes, and stir until dissolved; mix in the sweetened condensed milk. Allow to cool but not thicken, about 10 minutes; gently pour into a layer on top of the cherry layer. Return to refrigerator and allow to chill completely, about 1 more hour.
  3. Place blue raspberry gelatin mix and 1 packet of unflavored gelatin into a heatproof bowl, and mix with 2 cups of boiling water, stirring until the blue gelatin is clear, about 2 minutes. Allow to stand and cool but not thicken, about 10 minutes; gently pour onto the white layer. Chill in refrigerator until the dessert is firm and cold, about 1 hour. To serve, cut into squares.

I made this jello for the 4th of July and it turned out perfectly. I would give it 5 stars, except that I was concerned because the list of ingredients and the directions did not match up. The red and blue layer called for 2 envelopes unflavored gelatin in the list of ingredients, but the directions said to add 1 packet for each layer. What to do?? I went with the directions and used 2 packets for each of those layers and yes, it did turn out firm - but it looked perfect and served up beautifully like finger jello - the kids loved it - I would absolutely make it again - it may become a 4th of july standard in my home.

It looked great but was disappointed it had to much unflavored gelatin in it. It was chewy more like finger jello not what I was looking for. Next time I would leave out the unflavored gelatin or cut back on it.

I made this tonight for 4th of July tomorrow. I love the way it looks but haven't tried it yet! I sprayed a little cooking oil on the glass dish so it should come out easier when I cut it into squares. I plan to use whip cream on the top with a strawberry just to make it pretty and festive. I used only half a pack of unflavored gelatin with the colored jello. I used one full pack with the white.

The first step says to add 1 packet which is only .25 ounces but when you look at the list of ingredients, it says to have two .25 ounces ready which are 2 packets instead of 1. I noticed that someone else saw this error too and I'm wondering if it can be updated in the steps. Otherwise, I'm enjoying this recipe so far and will update my review when I try it on the 4th of July. Update: The taste was pretty good but it's just an okay dish. Jell-O is Jell-O, but this dish is not something I would want again.
