I wanted to clean out my refrigerator and found this recipe that would use many of the items I wanted to clear out of the frig. I had a little less cottage cheese than the recipe requested and a little more spinach but it was close enough. It worked out great. I thought it was a good dish but could use extra seasoning.

Great quiche - especially when you bake it in a pie shell. I bought Marie Callender's deep dish pie crust and it worked out perfectly w/the recipe amount yielding 10 servings. I made it for a few friends a couple of weeks ago and they raved about it. Decided to add it to my Easter brunch this year. Can't wait for everyone in the family to try it. I'm going to pre-mix the ingredients and allow them to refrigerate overnight so there's less prep time in the morning. Hope this works out alright. Wish me luck. I'll post later and let you know how it worked out!!!

I was kinda hesitant as to how this would turn out since i slimmed it down GREATLY. the result was a protein and spinach packed vegetarian friendly dish. I used egg beaters, fat free ricotta and cottage cheese (only 3 cups of cottage cheese). I also only used 2 cups reduced fat mozzerella and left the ceddar out. Doubled the spinach (20oz) and used garlic salt instead of salt. SUPER EASY. only down side is the sodium content with all the cheese.

This is an easy egg casserole to throw together the morning of a potluck or family gathering. I like to add a small jar of diced pimentos for added color and flavor.

I decided to make this on Christmas morning since the reviews were all rave, but I didn't really like it. It was edible, but for how fattening it must be with all that cheese, it just wasn't worth it to me.

Delicious and easy. My young boys even liked it. Normally it's a fight to get them to eat anything green. If you like spinach alot - or want to make it more nutritious - I would suggest using 2 packages of spinach.
