Scottish Mince Pie

This is a hearty, baked meat pie that would work beautifully for a Sunday supper. The ground beef is cooked until tender, and combined with beef bouillon and onion. Cornstarch and water are added for thickening, and then this savory filling is arranged in a pie crust, topped with another crust and baked. Slice and serve it with mashed potatoes.

A hearty combination of steak and veggies make the filling for these delicious individual pastries. The pastry rolls out beautifully, and bakes up golden brown. These are perfect for lunchboxes or a casual supper.

This recipe was created by trying to copy a steak pie made at the 'Butt and Ben' Scottish Bakery in Pickering, Ontario. My husband says it's better! You could also add 2 calf kidneys (well washed and de-veined and cut into bite sized pieces) to make Steak and Kidney Pie!

For this savory pie, ground beef, onions, veggies, herbs and spices marry perfectly: Everything is sauteed together and then combined with broth and tomato paste, and simmered until ready to pour into a prepared pie crust. The hearty filling is then topped with fluffy mashed potatoes, sprinkled with Cheddar cheese, and baked.

Lamb Cobbler

It 's hard to say which is better, the savory lamb filling or the parmesan scone topping. In Lancashire, when I were a lad, we had this at school. It ranks alongside egg and bacon buttys on fried bread as one of the world's culinary masterpieces.

Pastry is rolled into a 12-inch square and placed on a cookie sheet. Then it 's topped with a seasoned ground sausage mixture, sliced tomatoes, onions, and a smattering of chopped hard-boiled eggs. Strips of dough are latticed over the top, and then the pie is baked until the crust is golden. It 's especially nice served with parsley mashed potatoes.
