  1. Mix Brie cheese, plum tomatoes, basil, 1/2 cup olive oil, garlic, 1/2 teaspoon salt, and pepper in a bowl; cover bowl with plastic wrap and marinate for 2 hours.
  2. Bring a large pot of water to a boil; add 1 tablespoon olive oil and 2 teaspoons salt. Cook bow-tie pasta at a boil, stirring occasionally, until cooked through yet firm to the bite, about 12 minutes; drain. Add pasta to cheese-tomato mixture; toss. Sprinkle pasta with Parmesan cheese.

  • To make as bruschetta, make as above and spoon onto slices of baguette and broil until cheese has just melted. Can also be served in bowl; allow guests to spoon mixture onto baguette slices and leave unwarmed.

Loved this! I cut the recipe down and used rotini pasta. I loved how the brie melted into the pasta. The whole family liked this, which was odd b/c I'm the only one that likes brie in the house. I will def be making this again~YUM! Thanks for sharing. :)

We make this all the time with potato gnocchi instead of the pasta and only marinade for 1 hour. This is comfort food at it's best.....yummy

Tried this for my daughter-in-law's baby shower because I wanted a dish without mayo. It was good, nothing outstanding. I didn't find it very flavorful. If I made it again, I would add some spices.
