Ingredients

  • 3/4 cup shortening
  • 1 1/2 cups sugar
  • 2 eggs
  • 3 cups self-rising flour*
  • 1 teaspoon orange extract
  • Colored sugar (optional)

Directions

  1. In a mixing bowl, cream shortening and sugar. Add eggs, flour and extract; mix well. Cover and refrigerate for 1 hour or until easy to handle. On a floured surface, roll out dough to 1/4-in. thickness. Cut with 2-in. cookie cutters dipped in flour. Sprinkle with colored sugar if desired. Place 1 in. apart on ungreased baking sheets. Bake at 375 degrees F for 6-8 minutes or until lightly browned. Remove to wire racks to cool.

Footnotes

  • As a substitute for 1 cup of self-rising flour, place 1-1/2 teaspoons baking powder and 1/2 teaspoon salt in a measuring cup. Add all-purpose flour to measure 1 cup.
