Roast for 1 hour in the preheated oven. Turn the oven off and leave the roast inside. Do not open the door. Leave it in there for 3 hours. 30 to 40 minutes before serving, turn the oven back on at 375 degrees F (190 degrees C) to reheat the roast.

I was afraid that I might screw up an expensive cut of meat since my Thermopen instant read thermometer never let's me down. But not having to check the meat temp every few minutes was enticing enough to give it a try. Outstanding! It was easily the best I ever made, and the easiest too.

This roast was soooo worth the wait! I followed the cooking instructions exactly and it was perfect--a big hit with everyone on New Year's Day. My changes: I used granulated garlic and Penzeys English Prime Rib Rub instead of the salt and pepper, and I didn't have a rack for my roaster, so I cut a large yellow onion in half and set the roast on top of that instead. The au jus was wonderful as well. Will definitely make this again on special occasions.

I had originally found this recipe on Paula Dean's website. It was delicious--and smelled superb while cooking. I used an electronic meat thermometer--cooked until it was 145. Was just right. Roast was only 4 pounds so it took less time to cook. Will definitely make again!

Everything everyone said about this recipe was true! It was absolutely perfect. I used a 3 pound roast and I didn't change anything. The only thing I couldn't figure out was why there were no drippings for gravy. You have to try this recipe - you won't be disappointed!

If I could give this recipe 10 stars I would. I, like many other members, was very skeptical about this recipe . . . and cooking this cut of meat in general. I have never ever made a roast and was pretty worried about how to cook it. After reading all the other rave reviews I decided I was going to give it a shot. I was expecting 16 people for xmas dinner and it was my first year making it myself (so you can see why I was so worried). I used a 9 pound cut of meat and followed the directions pretty much to a T except that I rubbed the spices all over the meat & let it sit over night before coooking it. I was afraid that I or someone else would open the oven so I taped it shut. At times I thought the roast might be cooking too much or not enough and again too much. BUT, when I opened that oven door it revealed the most perfect rib roast I have ever laid eyes on. And when we cut it open everyone oohed & awed! Because the meat was 9 pounds I did keep it in the over for 45-50 minutes on the last cooking time rather than 30-40 and it came out perfectly. This was the best prime rib I have ever had - put Cattleman's to shame. I will definitely be making this again & again. My whole family loved it. I will never be afraid to cook that $80 cut of meat again - this recipe is truly fool proof. Thank you for sharing!

I love rib roast but have always been afraid to make it. Since they are not cheap I wasn't sure if I really wanted to take a chance at screwing it up. However, I got brave this year and bought a 7 lb. roast for x-mas and gave it a try. It was extremely easy and turned out perfect!!!! So....if you are like me and a little scared give this recipe a try. Easy and like it says "foolproof"!!!! Deeeelish!!!!

This is how I have made prime rib roasts for years except that I let it sit in the turned-off oven for only 1 hour instead of 3 hours. The other thing is that it doesn't matter how big the roast is. It works out perfectly every time.

This was absolutely foolproof! Like others I was somewhat sceptical at first, but thought I'd give it a try. I did as another rater suggested and rubbed all over with olive oil then added steak seasoning. We made this for Christmas dinner and it turned out perfectly. Thank you!
