"My mum has been making these delicious, no-bake squares every holiday for years! They make a pretty addition to any holiday platter of cookies, bars, and squares, which makes them great for entertaining. They can also be made early and frozen. These are very sweet and rich, so cut them fairly small."

Original Recipe Yield 1 9x9 inch pan
 

Ingredients

  • whole graham crackers
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 egg, beaten
  • 1 cup graham cracker crumbs
  • 1 cup shredded coconut
  • 1 cup chopped walnuts
  •  
  • Icing:
  • 1/2 cup butter
  • 3 tablespoons evaporated milk
  • 2 tablespoons vanilla custard powder
  • 2 cups confectioners' sugar
  • 1 teaspoon vanilla extract

Directions

  1. Line a 9x9 inch baking dish with whole graham crackers without overlapping them.
  2. In a saucepan over medium heat, bring to a boil 1/2 cup butter, brown sugar, and egg. Stir in the graham cracker crumbs, coconut, and walnuts.
  3. Remove saucepan from heat. Carefully spread over whole graham crackers, covering entire surface of baking dish.
  4. Beat together 1/2 cup butter, evaporated milk, custard powder, powdered sugar, and vanilla. Spread icing evenly on top of crushed graham cracker filling. Cover, and refrigerate.
