I just made these tonight. They are very good and quite fluffy. However, I followed the directions (except for the shortening, came out fine) and I have to say, they amounted to about 2 medium-sized pancakes (no big deal though, that's how much I eat anyways). But, I did notice that they tasted pretty egg'y - more so than they should have in my opinion. Next time I'll mess around with the quantities of ingredients a little more. :) edit: I realized I may have put ingredients in the wrong order... I'll try this again sometime and see if there's a difference

I did substitute butter for the shortening, so I know I'm not 'rating the original recipe,' but this was sooo good! These pancakes are unbelievably fluffy and will be the recipe I use from now on!

I forgot the shortening and these were still the BEST pancakes EVER! Light, fluffy, each one was about 1/2" thick and tasted great. I didn't miss the shortening, so I'm not going to add it next time, either! Thank you so much for this recipe.

This recipe is excellent!I followed the recipe exactly as is.It is perfect!There was no need to change anything!I have made it about 8 times now & have started to get creative with it.My husband who does not care much for pancakes loved this recipe!I have recently started adding in 2 mashed bananas & everyone loves it! Thanks for a great recipe.I will definatly be using this for years & years to come! :)

I have always made pancakes with this recipe and I will never go back to box again. My husband actually says that if we divorce then I have to give him this recipe. I do reccomand a half of teaspoon of vanilla to give it a bit of flavor.

These were probably the best pancakes I've ever made! Thanks for the recipe! I tripled the recipe, and I used 1 part margarine + 2 parts shortening, for the fat. I took the advice of another reviewer, and cut the shortening/margarine into the flour (I didn't melt it). I also added 1 tsp. vanilla. So yummy, and very fluffy. I also followed another reviewer, and cooked them slowly, on a 300 degree electric griddle. I will surely be making these again! :)

I made this a few months ago...not really what I was looking for..Mine tasted too floury and didn't really fluff up. I think I would need to play around with maybe adding more flavoring to it.

Love it! Definitely fluffy! I usually make a double recipe and freeze the leftovers - just pop them in the toaster for an instant brekkie on weekday. WAY better than a frozen pancake and much more economical. Thanks Eugene!

I finally found it!! Eureka - sp? - anyway - tried so many recipes - even read about different techniques - all motivated by the fact that I knew a pancake house flap jack was only a few tweaks away - and here it is - shortening - can't believe I didn't figure it out considering I make and sell biscuits - so here's my approach: lactose intolerant so used soymilk with some lemon juice (mock buttermilk: 1cup milk:1 Tbsp lemon juice or vinegar-let rest for 5-10 min.) - cut shortening into dry mix 'till coarse - not too fine - whisk egg into wet - add to dry - JUST A FEW STROKES will mix - I finally realize how crucial this is and how those lumps and seemingly unmixed portions you just can't stand not blending actually affect the tenderness (and your pancakes won't be lumpy like you think) - ok - the last - i let the batter sit on the counter (probably should have put in fridge) for about an hour - until i saw lots of little bubbles - those bubbles are the key to your incredibly fluffy pancake - when you pour your batter into the pan DON'T mix - you want as many of those little bubbles as possible - this is why letting batter sit even overnight makes such great pancakes - the air bubbles form and create super fluffy cakes!!

This is way better than any boxed pancake mix I have made. I followed other reviewers suggestions and used butter instead of shortening and added a dash of cinnamon and splash of vanilla. I let the batter sit for about 10 minutes before putting them on the griddle. A great way to start the day!
