Made these and LOVED them. I added vanilla, cinnamon and nutmeg to the batter. My husband thought he had died and gone to heaven. I've never made pancakes from scratch but these are ridiculously easy and no other pancakes compare.
I cooked mine over medium heat as they do cook quickly and burn fast so you can't walk away from the pan. They also freeze and refrigerate well. My husband sometimes pulls one out of the fridge and eats it cold with peanut butter or chocolate syrup and a banana.
I recommend doubling the recipe as one batch doesn't go too far if you make 6" or larger pancakes. Also, don't stir the batter too much. mix the ingredients until they're combined and let the batter sit while your pan heats up.
