Fluffy Biscuit Muffins
SUBMITTED BY:
Virginia Foster
"THESE BISCUITS are simple to make and have a wonderful aroma when baking! This particular recipe is one of my husband's favorites - and biscuits were a steady diet in the Southern household where he grew up. The muffin shape makes them a bit different. -Virginia Foster, Paducah, Kentucky"

These biscuits came out wonderful. The recipe is easy enough for my 10 year old to make them herself. They are versatile enough to be used for breakfast(butter and jam) as well as dinner(cheddar or parmesan cheese and basil). I will definitely use this recipe again!

This recipe is awesome and so easy to make! The biscuits are incredibly light and fluffy. I added a teaspoon of sugar the second time I made them, as several reviewers suggested, and they turned out perfect!

Great recipe! I tweaked it a little (added garlic powder, or cheese, etc,) but stayed true to the basic recipe. They all turned out great!!

These were VERY simple to make and did come out very fluffy. I tripled the recipe to have enough for my family. I prefer biscuits a bit sweeter so next time will add a tablespoon or so of sugar. They were deliscious the next morning with some homemade apple butter!

This is a good recipe when you don't have the usual ingredients on hand...but certainly doesn't beat a flaky tea biscuit. The flavour is good enough, but not quite right. I didnt have self rising flour and used the baking powder substitute instead. The flavour of the baking powder was a bit strong, and I will use a bit of sugar if I make this again. Excellent texture though.
