While the cake recipe itself merely substitutes orange juice for one cup of the water called for on the cake mix box, the frosting recipe is particularly good and worth noting. For the cake, I used all fresh squeezed orange juice - no water. I added a teaspoon of vanilla and to give it some "orange oomph," a tablespoon of grated orange zest. The cream cheese frosting went well with the cake and I loved the small addition of orange marmalade. It didn't flavor it much, but gave it just the slightest hint of orange color. Again, for an additional orange flavor boost I added another teaspoon of grated orange zest to the frosting as well. My only criticism of this cake is that no matter how much doctoring up I did it still tasted like a cake mix but I can't exactly dock a cake mix for tasting like a cake mix! The cake is moist and fragrant and flavorful with fresh orange. The frosting was particularly good, and a perfect complement. However, without the addition of zest to both, I think this would have been very short on orange flavor.
