Fabulous dip! I omitted the mayo & added an 8 oz. container of sour cream instead. I also used marinated artichokes (& chopped the artichokes into small chunks) & added a little of the marinade into the dip to make it not as thick. I also added a dash of salt and pepper. not even sure if it needed it though. Definitely made a large amount, which was great since I was taking it to a party.

This was fantastic and a hit with all my friends! I took some of the user suggestions, and agree. I only used 1 8oz package of cream cheese, and added 1/2 cup of sour cream. I used marinated artichokes also, but washed the excess oil off with hot water in a colander. I added almost double the amount of artichokes, and a little less than the suggested amount of spinach. I also re-chopped the spinach for easier dipping. I mixed in some other Italian cheeses (romano, mozzarella, etc) and wasn't shy on the lemon juice for extra zing! A very tasty treat!!!

SUCH an excellent dip! I took advice from other reviews and used a bar and a half of cream cheese and about 1/3 cup sour cream. I served this in a bread bowl...came out wonderful!

Big Hit! I needed a quick, easy spinach artichoke dip recipe since I knew I would have only limited time to prepare for a week-night gathering. This recipe called for minimum ingredients and had great ratings. Due to time constraints, I did not read review suggestions and simply followed the recipe to a tee. My first attempt at spinach artichoke dip and several people ended up asking for the recipe! I have read some of the suggestions and next time I will try a few of them including lowering the cream cheese content, adding sour cream, adding mozzarella or italian cheese blend, and maybe using marinated artichoke hearts for a little extra flavor...just to see how that turns out. But once you go changing all of that, it's not really the same recipe, now is it?!?! If you need a quick, easy recipe AS IS, this one does an A+ job!

This is perfectly heavenly. Don't believe any of the reviews that tell you otherwise! The only thing I did a little different was to save a little of the parmesan to sprinkle on top, then broil for the last few minutes to get a bubbly browned cheesy top. Oh, I also used 1/3 less fat cream cheese and you would never know the difference. Several people asked for the recipe. Note: if you are bringing this to a party you can also heat it up in a small crock pot instead of baking and that works great. If you are really in a pinch you can microwave it and then transfer it to the crock pot to keep warm.

I have to be honest... I'm not a huge fan of any artichoke dip but I make it for other people whenever I go somewhere and almost every time someone will say that it's the best spin dip they've ever had. I substitute sour cream for the mayo though.

Absolutely amazing! I prepared this and hollowed out two (1 pound) loaves of Sourdough bread and served it as a bread bowl dip. Everyone filled up on this so much that it was difficult to tear us away from it to enjoy the turkey for Thanksgiving..

Made changes recommended by others- used only one block of cream cheese and added a couple spoonfuls of sour cream. Even better reheated the next day!

I just made half the recipe, and it was so simple and delicious. I made it as-is, but think some chopped red peppers would have been great in there, too.

I make this dip ALL of the time! It is by far the absolute best version I have ever had. Kills the restaurant competition. I usually double the garlic because I love it, and I add at least an extra half cup of parmesan cheese. Like others, I use marinated artichoke hearts, but if you don't have them just squeeze a little extra lemon in if you want more zing. I never understood why tortilla chips are served with this type of dip, since it's not Mexican fare. I cut pita bread into wedges, brush with olive oil, and toast in the oven for dipping. I have also used oiled/toasted baguettes. The recipe makes a large amount, so if you're not going to use it all it freezes very well. I never get that opportunity, because it is DEVOURED every time I make it! One of my all time fave recipes!

This was my first attempt at artichoke dip and my only question is this....why didnt i start making this years ago? I have always ordered it in restaurants and this recipe is easy and at least equally as good. I did use suggestions from others to halve the cream cheese and mayo and add sour cream. I think the key is to use fresh grated parm. served with blue corn chips for a delicious appetizer. Was well recieved by my guests.
