A baked fish dish. You get to choose the heat. Use mild salsa for a little heat and extra hot salsa for lots of heat! Serve with rice, black beans, warm tortillas and lime Margaritas for a festive meal!

'A co-worker gave me this recipe, but I didn't try it until recently. What a mistake it was to wait! It's easier than dipping, coating and frying...and the flavor is outstanding,' notes Heidi Kirsch of Waterloo, Iowa. 'Once you've tried this tender fish, you'll never go back to fried.'

Simple, easy fish recipe. Any white fish will do! And even the kids will eat up the spinach! (My four year old loves this dish!) This recipe was passed on by my Aunt and was a little bit of this, a little bit of that - so tweak the ingredients to your liking!

Cod fillets are coated in oats and fried to a crunchy crispy finish. Try it for a change. I think it is traditionally Scottish. Serve warm with chips and lemon or salad.
