INGREDIENTS
1 (11 ounce) can mandarin oranges, drained
1 medium cucumber, seeded and chopped
1 green onion, thinly sliced
1/4 cup cider vinegar
1 teaspoon minced fresh dill
1/4 teaspoon salt
1/4 teaspoon pepper
4 (4 ounce) orange roughy fillets

DIRECTIONS
For relish, in a small bowl, combine the first five ingredients; set aside. Combine salt and pepper; sprinkle over fillets. Place on a broiler pan coated with nonstick cooking spray. Broil 3-4 in. from the heat for 9-12 minutes or until fish flakes easily with a fork. Use a slotted spoon to serve relish with the fish.

Nutritional Analysis: 1 fish fillet with 1/2 cup relish equals 148 calories, 1 g fat (trace saturated fat), 28 mg cholesterol, 238 mg sodium, 12 g carbohydrate, 1 g fiber, 22 g protein. Diabetic Exchanges: 3 very lean meat, 1 vegetable, 1/2 fruit.

Huge hit! We made this for some fresh mahi-mahi we got in Mexico. They didn't have mandarin oranges so we chopped up a few local oranges and grapefruit. We were sparing with some white vinegar and my wife added a touch of honey which both sweetened it and added a nice consistency. My addition was some fresh jalapeno which added some more zest. This dish ranked among everyone's favorite dishes on the trip and was the only thing we made twice. The second time we left the vinegar out completely and nobody missed it.

A keeper! Served this for a dinner party last night and everybody loved it. The relish was a bit too vinegary when I first put it together, but I just drained off a little of the vinegar and by the time I served it, it was perfect. Served it with corn on the cob as a side dish: when my guests said they were hungry, I popped the fish under the broiler, threw the corn into the already boiling water, and dinner was ready to go in ten minutes. Thanks!

This is a wonderful summer dish. I've made it twice. The first time I made as stated in the recipe. The second time I sprinkled the fish with fresh squeezed orange and lemon juice. This is a family favorite that I will make again.

Outstanding!! I made it for a small dinner party and everyone loved it. I also had left over relish so I broiled more fish the next day and it was even great the second day.
