Ingredients

  • 1 cup water*
  • 4 tablespoons butter or margarine
  • 2 medium carrots, sliced
  • 1 small green pepper, chopped
  • 4 cups Pepperidge Farm® Herb Seasoned Stuffing
  • 1 1/2 pounds fresh or thawed frozen firm white fish fillets (cod, haddock or halibut)
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley

Directions

  1. Mix water, 2 tablespoons butter, carrots and pepper in saucepan. Heat to a boil. Remove from heat. Add stuffing and mix lightly.
  2. Spoon stuffing across center of 3-quart shallow baking dish. Arrange fish on each side of stuffing.
  3. Melt remaining butter and mix with lemon juice and parsley. Spoon over fish.
  4. Bake at 400 degrees F 15 minutes or until fish is done.

  • TIP
  • *For moister stuffing increase water by 2- to 4- tablespoons.
  • To melt butter, remove wrapper and place in microwave-safe cup. Cover and microwave on HIGH 30 seconds.
