Fish Fillets with Stuffing

INGREDIENTS

  • 2 tablespoons butter or margarine, melted
  • 1/3 cup chicken broth
  • 1/2 cup finely chopped onion
  • 1/2 cup finely grated carrots
  • 1/2 cup chopped fresh mushrooms
  • 1/4 cup minced fresh parsley
  • 1/2 cup dry bread crumbs
  • 1 egg, beaten
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 1/2 pounds fish fillets (cod, halibut, pollock, etc.)
  • Paprika

DIRECTIONS

  1. In a large bowl, combine the first 11 ingredients and mix well. In a greased 13-in. x 9-in. x 2-in. microwave-safe dish, arrange the fillets with stuffing between them. Moisten paper towels with water; place over fish. Cook 15-16 minutes or until fish flakes easily with a fork, rotating dish occasionally. Sprinkle with paprika.

Editor's Note: This recipe was tested using a 700-watt microwave, so cooking times may vary slightly if your oven has a different wattage.

Everyone in my family really enjoyed this -- including my mother, who is fairly picky about the doneness of fish. I didn't have any carrots, so made it without, and added parmesan. Although the stuffing wasn't crunchy (as the description on the recipe states) like I thought it would be, it was very good and had a delicious flavor. If you like fish and you like a fast, easy, and delicious way to prepare it, then put this recipe in your file. Yum!

My family didn't like this recipe too much. My microwave cooked the fish unevenly so parts of it were dry and parts were still raw. The stuffing was very good and not too high in fat so I may make it again but next time I will cook this dish in the oven.

I'm not usually a microwave cooker, but this was pretty good. I sub. seasoned salt for salt & added a little parmesan. Yummy! Even my kids liked it.
