Fabulous, and quick!!! I used a stew pot instead of a frying pan, chopped the cod into domino sized pieces, doubled the parsley and olives, and used a can of Rotel, instead of plain tomatoes.
When the fish was cooked, I threw in two cups of leftover rice from the fridge, let it simmer, then served it in soup bowls garnished with parsley sprigs.
