Ricotta Kuchen with Streusel Topping

Adapted for easy use with a bread machine, this streamlined version of the traditional German pastry wraps a buttery dough with a streusel topping around a creamy ricotta filling. If you don't have a bread machine, follow standard bread-making instructions and knead the dough by hand. Note that you can substitute milk for the non-dairy amaretto creamer.

This pie has a lovely, creamy texture, and a refreshing taste from lemon juice and lemon rind stirred in. The filling is poured into a homemade crust, baked for an hour until set, and served with sweetened, sliced strawberries.

Phyllo Tarts with Ricotta and Raspberries

Miniature tart shells are lined with buttered sheets of phyllo dough. A sweetened and spiced ricotta cheese filling is spooned onto each tart shell, and then they are all baked. When cool, arrange fresh raspberries on top and dust with confectioners ' sugar.

This is a combination of several fresh fig appetizer recipes. The flavors of fresh figs, tangy goat cheese, salty almonds, sweet honey, and balsamic vinegar contrast to make these a delicious and very pretty appetizer. Arrange figs in a circle, tops facing in, for a flower effect and this will be a lovely addition to a bridal shower menu or any formal event.
