This was delicious! I had to make a few adjustments with what I had on hand, and hopefully it will turn out just as good (or better) when I make it again. I made my own taco seasoning (as recommended) and mixed some in while browning the meat. Also, I didn't have enough rice, so I used a Spanish Rice/Pasta mix. Added black beans, but did not add the zucchini. Served with Taco shredded cheddar cheese and some sour cream. Yum!! I'm looking forward to leftovers wrapped up in a tortilla or eaten with chips. Thanks for a great dinner.

Yum. I made some changes since I didn't have a few ingredients, and it still turned out great! I used ground turkey. Didn't have taco seasoning so I used the taco seasoning recipe on this site. It is so good and easy that I'll never use the packaged stuff again. Didn't have zucchini, used water chestnuts instead. No corn, so peas. Regular rice instead of instant, and diced instead of stewed tomatoes. Still awesome. I'm curious to try this as is sometime.

Very good. Hides veggies well, my kids didn't realize they were eating zucchini. i used regular rice b/c that's what i had which extended the cook time. adding salsa or hot sause was a good idea

I didn't have instant rice so I used basmati rice (rinsed). I had to adjust a bit, using 3/4 cup rice and 1 1/2 cups water, and cooked for 25 minutes. I put in the zucchini and corn after about 20 minutes so they wouldn't get too mushy. We all liked it. Thanks!

Very, very good. I did keep the cheese off and just let the people add their own, I think it's quite good even without it. Left out the corn and added a green pepper I needed to use up, and as I had some fresh tomatoes I put in about 1.25 cup chopped and added a little extra water to make up for the liquid missing from canned. These substitutions worked fine, I think you could do just about whatever you wanted to the veggies and it would be delicious. I was worried there didn't seem to be enough liquid for the rice to cook but it came out perfectly. My new favorite skillet meal: thanks so much for sharing!

Made this for dinner because I had some ground turkey I wanted to use. I didn't have zucchini, so I used 2 cups of corn. I think it tastes pretty good, but seems like it needs to go with something else, like it should be a taco filling. It tasted good, but maybe someone who cooks more could figure out how to use it. I noticed a lot of people served with chips, but I was trying to go for a low-calorie dish. To me, it wasn't outstanding, but definitely quick and easy and tasted ok.

This is a really great idea! I added some garlic powder and cumin for additional flavor, along with some black beans. I wasn't sure about the zucchini at first, but it tastes delicious in this dish. I served it with rolled up tortillas and sour cream - yum!

I chose to make this recipe because I had some ground turkey I wanted to use, and also found that I had most ingredients on hand. I started off by browning the turkey with onion, fresh garlic and celery. I added salt, pepper, cayenne, cumin, paprika, onion powder and garlic powder to the mixture. In another pot I made some basmati rice, as I do not usually eat instant rice. Once the meat was browned, I added a large can of whole tomatoes and mashed them up, a little bit of salsa, the taco seasoning, some sliced black olives, the corn, a can of kidney beans, the water and some hot sauce. I didn't have any zucchini, so I omitted that ingredient. Afterwards, I added the rice to the mixture and stirred it up and topped it with cheddar cheese. I served the dish with tortilla chips, avocado and sour cream and I think we liked even more than taco soup! I'll definitely be making this again! YUM!!!

Great tasting fast meal! I only used 1/2 the taco seasoning and instead of zucchini I added celery with the onions to sautee. I will make this again, next time add some black beans I think.

I really enjoyed this recipe, quick and simple! Love that you can add extras without ruining any flavor! I didn't use taco seasoning instead opted for my own which included flour, beef stock, chili, cumin, paprika, garlic, sugar and salt. I used stir-fry beef instead of hamburger and a can of Mexican flavored chopped tomatoes too. I also used regular rice and you just cook it for 15-20 minutes instead of the 5 for the instant. I added 200g of frozen corn, a tad more than stated. Once it was finished I topped with the cheese and some black olives. I can see how so many other things would be yummy in it too like kidney beans, black beans, crushed tortillas, avocado, etc. We also topped with sour cream! Kids loved it! I could do more spice but the kiddos aren't that inclined at their age lol. Totally making again ;)

Simple, tastes good, and doesn't break the budget. I didn't have zucchini so left out that part. I had red beans so I added them. Even if I have zucchini in the future I don't think I would put it in the recipe after having a successful dinner without it. Everyone had seconds.

This dish was a great foundation. With a few simple additions it was great! I added garlic with the onions and than green peppers. I used diced tomatos with jalepeanos. I added a little extra taco seasoning and some cumin. I also added some hot sauce and used brown rice. Than I topped it with lettuce, fresh tomatoes and avocados all on top of blue tortilla chips. My husband who is picky with all in one kind of dishes- loved this one! Thanks for a great recipe.
