Really was easy. Added fresh minced garlic to the turkey and onion. Also used diced tomatoes with green chilis.(my husband gags on stewed tomatoes!) Served with tortilla chips and sour cream. Big hit!

Had to use fajita seasoning instead of taco, but otherwise followed all directions. It was OK, not great but not bad either. I think next time I'd put it in tortillas and make burritos.

I think this is a great recipe. I have made it a few times already, once as written and the other times with changes (to make it even healthier). This time I substituted the corn for lima beans, and white rice for brown and could barely taste the difference. Even my 2 year old liked it this way! I also used precooked rice and left out the water, and this works nicely if you have leftover rice you need to get rid of. Oh, and one more thing, if you don't have a taco seasoning packet, check out the recipe on this site for Taco Seasoning by Bill Echols, it is wonderful! My family loves this recipe, and we will be keeping it in the dinner rotation!

We loved this, especially my teenagers. I did however, have to make a few changes based on what was in my pantry. I added a small jar of medium hot salsa in addition to the taco seasoning to spice it up a bit. Also, I used regular white rice, since I was out of instant rice. I used a half cup of rice and about 1/4 c. of additional water. That along with the salsa and undrained stewed tomatoes made enough liquid to cook the rice nicely in about 20 minutes. I served this with lots of different toppings, such as chopped black olives, sour cream, and crushed tortilla chips along with the grated cheddar. What a yummy meal... Thanks for a keeper!

Not bad. I felt it was a little plain so I added some extra taco seasoning, cumin and chili powder. The cheddar cheese on top helped a little too. We also indulged with a couple of dollops of sour cream. I had only regular rice which I prepared seperately then added in place of the minute rice. This was a very economical meal. Both my son and BF enjoyed.

We had ground turkey that we needed to use, so I came on here searching for a recipe. We had all of the ingredients for this one on hand except the zucchini, so we went for it. It was surprisingly very good! My husband said he would eat it every night. I'm not sure it is one to "wow" guests or anything, but it definitely fits the bill for a warm, fast, and tasty mid-week dinner. I would like to try it again with a zucchini (you can never have too many ways to use zucchinis up!), but we will make this again. Good recipe and very easy!

great flavor, very different texture than i expected. it was more like a casserole to me. absolute success in our house, however my dad (a steak & potatoes kinda guy) wasn't a fan. everyone else loved it.

I liked this. I didn't have instant rice so used precooked calrose rice. I also didn't have any zucchini but it was good without it. Sour cream was definitely a good addition. I also put the mixture in a corn torilla and made kind of a rice taco. That was good too. My husband went back for fourths!

Smelled really good while cooking, but was a little more bland than the smell would have suggested. We omitted cheese due to a milk allergy. Would suggest adding something to spice it up - maybe garlic and fajita seasoning, cumin, something like that. Might try again, but probably not.

I'm a nanny for three young kids, and when I can get all three to eat something it's a miracle! This was the simplest thing to make, I usually omit the onion as most my family member don't like it. So easy for a week night. I recommend it to all of my mom friends. Thank you thank you!

FANTASTIC!! Everyone loved this dish. I used fresh corn and a can of "diced" tomatoes instead of "stewed". It was quick, easy and turned out absolutely delish. Will definitely make this one again!

Excellent recipe! I made a couple of minor changes ... didn't have any zucchini, so I used Lebanese squash and I used instant Brown rice instead of white. The addition of one teaspoon of fat-free sour cream per serving added a very nice touch. Delicious!

I made a few changes to the recipe. I used double the amount of zucchini. I didn't have stewed tomatoes so I used 2 cans of diced tomatoes with jalapenos instead. I also didn't have instant rice, so I made my rice separately and added it to the mixture. I also didn't have corn on hand, so I didn't add it, but will definitely add it next time. The zucchini really absorbed the flavors. It's definitely a great addition to my collection of zucchini recipes!
