Ingredients

  • Vegetable cooking spray
  • 1 pound skinless, boneless chicken breast, cut into cubes
  • 1 large green or red pepper, coarsely chopped
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 3 1/2 cups Swanson® Chicken Broth or Natural Goodness™ or Certified Organic Chicken Broth
  • 1 (10 ounce) package frozen whole kernel corn
  • 1 cup cooked rice
  • 1 teaspoon chopped fresh cilantro leaves or parsley
  • 5 lime wedges

Directions

  1. Spray a 3-quart saucepan with cooking spray and heat over medium heat for 1 minute. Add the chicken, pepper, chili powder and garlic powder. Cook for 5 minutes stirring often.
  2. Stir the broth, corn and rice into the saucepan. Heat to a boil. Reduce the heat to low. Cook for 10 minutes or until the chicken is cooked through. Stir in the cilantro. Serve each serving of soup with 1 lime wedge.
