I didn't think this dish was all that great, unfortunately.
I'm sure it's pretty easy to make usually, but I made it the hard way. I made the tortillas myself (from "masa harina de maiz" mix I had on hand), and had to shred the Colby myself too. And I didn't have the chicken already cooked so I had to boil some boneless skinless breasts. Still, when this was all assembled and cooked, it tasted just okay, and visually it was less appealing. I should note that I made it exactly as written, except that the cream of chicken soup was the "98% fat free" kind (the other soup was the normal kind), and that this was the first time I'd ever bought Colby cheese (which I think I do like now). This lasted me for two big dinners, and the second, leftover dinner was not as nice as the first.
