I think that it didn't have quite enough flavor, so I added 1t of salt, 1 t pepper, and 1 t basil and it was delicious!

I used jarred roasted red peppers and found that there was not much flavor to this dip. If I made it again I would try fresh roasted red peppers and definitely let it marinade for a day.

Great recipe, but I make mine a little different. I use two red peppers which I sautee myself and I include the garlic and add some basil as well here with the olive oil. Once it cools, I add the entire mixture to the food processor along with 1/3 cup of plain yogurt (to taste, can be omitted completely) and 1 1/2 tea of hot sauce (also to taste and can be omitted.

I had some problems trying to get the results I wanted from this recipe, and in the process used almost every small appliance in my kitchen. First, the feta didn't blend completely, so the texture was chunky. After a few minutes in the blender, the texture was better, but thin. I ended up adding cream cheese to the mix and it ended up quite wonderful, but only after a lot of attention and transferring the mix from food processor to blender to bowl with a hand mixer.

I had this dip at a greek bistro in SLC, we thought it was delish and this recipe is exactly what we had! Amazingly good, gets spunkier as it marinates for a few days. If you love feta this dip is for you. Yum!!!

Nice, easy, simply very tasty. I made this last week for a BBQ everyone loved it and had many request for the recipe and have been asked to make it again for another party tomorrow!
