INGREDIENTS
1/2 cup olive oil
1/4 cup balsamic vinegar
3 tablespoons water
1 envelope Italian salad dressing mix
2 (10 ounce) packages Italian-blend salad greens
2 medium tomatoes, seeded and chopped
1 small red onion, thinly sliced
1 cup crumbled feta cheese
3/4 cup dried cranberries

DIRECTIONS
In a jar with a tight-fitting lid, combine the oil, vinegar, water and salad dressing mix; shake well. In a large salad bowl, combine the greens, tomatoes, onion, cheese and cranberries. Serve with dressing.

I got lots of compliments on this when I served it at a birthday party. The only thing I did differently was use one and a half heads of torn red leaf romaine lettuce because it was much cheaper than buying two bags of salad. Oh- and I did not toss the dressing into the salad, I served it seperately.

Loved this recipe, it was a big hit at a potluck meeting I went to. I added almonds to it to add an additional crunch and everyone loved it.

Excellent salad! This will go with any meal. I took it to a luncheon and we all especially LOVED the dressing. The other ladies made chicken salad sandwiches and strawberry soup. Perfect combination if you're looking for a good menu! I did add some walnuts and they were very good as well. Great color and easy to make. Thanks!

I made this salad for 90 people last night (I love the way we can enter the number of servings to change the amounts) and everyone loved it. It is easy to make, and the flavors and colors are a great contrast. Perfect for a Christmas dinner.

I made this for a 4th of July potluck. It was perfect - easy to make, gorgeous to look at, and so tasty. My only addition was adding slivered almonds that I toasted on the stove in a pan. My husband and son requested it for lunch today (the 5th of July!)
