Irish Breakfast

You could face anything after this hearty breakfast of eggs, mushrooms and tomatoes fried with bacon and butter. Slices of Irish soda bread are grilled in the skillet and served on the side.

This is a traditional breakfast in Britain. I make this most weekends, especially if there are guests or I've over-indulged with drinks the night before. You can leave out anything you don't have and can include other ingredients such as, black pudding, baked beans (the Heinz UK version) or even scrambled eggs. For more than one serving just multiply the ingredients. 

Sausage Plait

Pastry is rolled into a 12-inch square and placed on a cookie sheet. Then it 's topped with a seasoned ground sausage mixture, sliced tomatoes, onions, and a smattering of chopped hard-boiled eggs. Strips of dough are latticed over the top, and then the pie is baked until the crust is golden. It 's especially nice served with parsley mashed potatoes. 

Red Leicester Pie

One pound of Red Leicester cheese is grated and stirred into this savory pie's filling. Chopped tomatoes, onion, Worcestershire sauce and a nice mustard is stirred in as well. The filling is then spooned into a homemade pastry crust, topped with a second pastry crust and baked.

Scotch Eggs are part of the traditional Scots breakfast. They are also sufficiently versatile to be served hot with gravy at teatime, or cold as a snack.

This is a wonderfully simple chunky soup. I use good quality Irish back bacon but if you can't get this, it tastes equally good made with pancetta. The dark green colour of the cabbage alongside the tomatoes gives the soup a beautiful colour.

There's nothing too fancy about this rustic Spanish style omelet, just lots of hearty goodness from crispy fried potatoes and onions. Chopped tomatoes and green onions lend even more flavor and color.

This hot ham and cheese sandwich is dipped in egg and hot pepper sauce, then pan fried. Great brunch idea for teenagers, and you could experiment with different fillings. 

Chinese Dan-Bin

This is an every-day recipe in Taiwan. Bacon and egg are fried with a tortilla and served with hot sauce. If you are an average picky-eater, you will probably not enjoy. You may use either bacon or ham.
