This was so yummy! It's light and has a deep flavour. The only thing I changed was to use 2t of ginger, next time I might up it to 3t as we like it strong. I didn't have the right molasses so I made it up with golden syrup and brown sugar, and I didn't have cloves so I used a little allspice instead and it wasn't worse off for the changes.

Great recipe! I used the recipe below and reduced the molasses to about 1/2 and doubled the spices. The end result was absolutely amazing!!!

Great recipe! I also increased doubled the cinnamon and ginger. I agree with some others about cooking time. Mine was perfect at 45 minutes, so be careful with that. Otherwise, a great recipe!

Even better the next day. Did as others suggested, 1 1/2 t. spices and 1/2 C applesauce to keep moist.

This is the recipe my mother used over 60 years ago and it's still a winner! I did not need to add or substitute anything because I used all fresh spices - if you use old spice, then you need to add more to get the same flavor. Thanks to Charles for sharing this with us.

The texture of this is wonderful - moist, substantial, with a bit of a gooey layer on top as the pic shows. But as others have said, it is not sweet enough and doesn't really have a gingerbread flavor. I'm giving it 5 stars though, since I think with more sugar (I'm thinking of subsstituting honey for some of the molasses) and way more spice, I think it will be dee-lish. I'm making it for Valentine's day - my sweetie doesn't like really sweet desserts and I think this will be perfect. I just won't tell him how much butter there is in it :-)
