OK Here are some more hints. 1. make sure your baking powder is fresh and double acting. 2. make sure you don't over mix.. if you do it will make gluten and that is what will make it tough and chewy. it's better to mix in a bowl with a whisk than in the blender. 3. add a pinch of salt, it make everything else taste better. 4. mix all dry together, then mix in the wet, then the baking powder wont react until you want it to. 5. have whatever your cooking on hot and ready before you mix the wet, that way you can cook before all the baking powder is used up. 6. add fun mix-ins like fruit, nuts, or chocolate. lastly have fun and don't be so critical. mistakes are how you learn. if you don't like how it turned out this time, tweak it and try again. that's what makes cooking so great! thanks for the recipe.
