4 medium potatoes, peeled and diced
1/2 pound sliced bacon, cooked and crumbled
1 cup diced process American cheese
3/4 cup mayonnaise
1/4 cup sliced stuffed olives
2 tablespoons chopped onion
2 tablespoons chopped green pepper

DIRECTIONS
In a saucepan, cook potatoes in water until tender; drain. Stir in remaining ingredients. Spoon into an ungreased 8-in. square baking dish. Bake, uncovered, at 350 degrees F for 30 minutes or until bubbly and heated through.

I almost shouldn't rate this recipe because I changed so many things, but it served as my inspiration! I didn't use american cheese, olives or green peppers. Instead I used cheddar & mozzarella and green onion. I also added some onion and garlic powder, black pepper and a teaspoon of minced garlic. Served it with the corned beef and cabbage on St. Patricks day. So YUMMY!

This was so easy and tastes so good. It was the perfect mix of cheese potatoes and vegetables. I left out the olives and it still turned out well.
