1 cup uncooked white rice
1/2 cup shredded Cheddar cheese
1 small onion, grated
2 eggs, beaten
1/4 cup butter, softened
1 cup fresh parsley
1 1/2 cups milk

DIRECTIONS
Preheat oven to 250 degrees F (120 degrees C).
In a saucepan bring 2 cups of water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
To the cooked rice add cheese, onion, eggs and butter. Mix well and gently stir in parsley and milk. Transfer to a 2 quart casserole dish.
Bake in preheated oven for 1 1/2 hours.

Not bad, but definitely needs something added. I added extra cheese to the leftover dish and it made a huge difference (needed salt, I guess). I also increased the cooking temp to 350 and cooked for half the time...much better. Be sure to add a few extra tablespoons of liquid though...so that it doesn't dry out.

This was a lot work for little pay off. It was extremely bland, and I even doubled the cheese.

I was looking for a rice dish I could eat as a substitute for a main dish. I found it very bland (despite using plenty of cheddar) and took far too long. I kept wondering if there was something missing form the recipe as submitted. Sorry to say I wouldn't make it again.
