Nothing canned here! Use fresh fruit, nuts, and organic vanilla yogurt (very important! - it's less sweet than other yogurt). A dash of cinnamon really adds that special something. Quick and delicious!

This is my doctored up version of a diet ambrosia salad my mom always made. I admit that this sounds strange, but it really is sweet and refreshing on a hot summer day! (It's not as low-cal as hers.) It's also easy to adjust to your family's fruit preferences.

By varying the fruit a bit, this salad can work for all seasons. Passion fruit make a great addition if they are available. In the summer, add lots of fresh berries and melons. In the winter, try adding dried cranberries or apricots. Fresh juice adds a bit of bite and also keeps the fruit from turning if you are making this ahead.

Crunchy, fruity and sweet. That about sums up this nifty fruit salad, and it is so easy to make. Fruit cocktail and pears are stirred into a bowl full of cherries, fresh apples, bananas, walnuts and coconut. Then a jar of marshmallow cream is folded in. Makes eight generous servings.

Dried Fruit Salad

If you have a penchant for dried fruit, you 'll love this salad. The fruits are plumped in a hot apple/cinnamon juice overnight, then served with slices of fresh fruit and a sweet orange marmalade sauce.

Fresh apples, pears and bananas are combined with fruit cocktail, mandarin oranges and chopped pecans in a dressing of cream cheese thinned with lemon juice and a bit of the syrup from the fruit cocktail.
