Hi, new member here. I've made this recipe at least six times in the past couple of months. I substitute Splenda for sugar and Blue Bonnet Lite for 1/2 to all of the butter. The only time it turned out dry was when I used egg substitute. I've made it in a 13x9x2 pyrex and in a 12" cast-iron skillet. I bought two loaf pans yesterday just for this recipe. Now I'm off to the kitchen to go make it again!

This Banana Bread is AMAZING. The only things that I like to add are 1tsp Vanilla extract, & a dash of nutmeg, ground cloves & cinnamon. The only reason I coudln't give this 5 stars is because the baking times are WAY off. I've made this more than once, and it only needs 45 minutes to bake. My oven is quite accurate & thankfully I thought to check this before the 60 minutes had passed or they would have been burnt for sure.... so beware of over cooking the loafs! Other than that though, this recipe is FABULOUS & one I plan to use over & over again.

I was really disappointed in this recipe after the great reviews. First, it did not rise right. I made muffins and the batter spread all over then sank in the middle. I do live at high altitude, so that may be part of the problem. Also, the butter taste was overwhelming. Other people commented on this, and I thought, how can a butter taste be bad? Well, now I know. I felt like I was eating a greasy butter muffin instead of a moist banana muffin. I won't be making this recipe again.

OMG! This recipe is sooo yummy. I'll never even try another. The suggestions were right on. I made the mistake of tasting the batter - let's just say one of the 2 loafs was small. Also, I made it in my daughter's kitchen- she is of this new generation (32yrs) who doesn't have the time or inclination to cook and didn't have a cooling rack. What I did was to take it out of the oven and put it on a cooled gas stove unit which is elevated. It was Extremely Delicious

WOW! This recipe is AMAZING! I have made it twice in three days. Both times it turned out GREAT! I cut the batch in half for just one loaf, baked for 60 minutes and it was perfect, just as written. Thanks!!!

This recipe sounded so great, i had to make it even though i didnt have all the ingred. i added a little nutmeg, cinn, van ext, and dried bananas. i had no bananas. Next time, im going to make sure i have everything. DELISH.

A little patience goes a long way with this recipe. With my gas oven it takes about an hour to bake. I cut down on the baking soda, which keeps it a little more dense. Which is the way I like it. Be careful though, DO NOT use the very course coffee sugar, unless you like your bread a little crunchy. If you want to try something different with this recipe, try these two things. 1) don't mash the bananas, just slice them and add them as you mix it all up. 2) Add a teaspoon of ground nutmeg. Believe me, it takes it to a whole new level.

Eating this as I type! This bread is delicious. I halved the recipe and only made one loaf, I know it's going to go fast. I used a 1/2 cup splenda and about a 1/2 cup brown sugar. I didn't have nuts so I added a handful of chocolate chips and a handful of oatmeal!! YUM YUM! Mine also only needed to cook for about 40 minutes.

Love this recipe! It tastes just like my Grandma's! I did add 1 tsp. vanilla and divided the sugars 1/2 C. brown sugar and 1/2 C. white sugar. Super good banana nut bread-this recipe is going into my favorites!

delicious and works every time. Even with less banana..can use apple sauce or sour cream to make up the amount for the 2 cups of bananas. Love it with walnuts and choc chips!!! My son LOVES this recipe!!!!

Wonderful! My husband loves it too and he is picky. We gave the second loaf to friends and it is their new favorite too. I did like others said and added vanilla to the wet and cinnaman to the dry. I will ad more cinnaman next time.

okay, this EBNB is CRAZY GOOD! i did the vanilla & 1/2 brown 1/2 white sugar like others suggested - i omitted nuts. it is the best banana bread i have ever had - please do not tell my mother!
