It doesn't take much to make rhubarb sing: Some sugar, a bit of flour, and a pat or two of butter. When this lovely double-crust pie emerges from the oven, it 's golden outside and sweet and luscious inside. It 's especially nice with a scoop of vanilla ice cream.

Rhubarb Orange Cream Pie

Diced, fresh rhubarb is folded into a delicious concoction of strawberry gelatin, orange juice concentrate, egg yolks, butter, sugar and flour. A sweetened meringue is carefully folded into that, and then the filling is spooned into a prepared crust and baked. Garnish this lovely pie with twists of orange rind and dollops of whipped cream. 

Rhubarb Cream Pie

This easy-to-follow recipe makes a lovely deep-dish custard pie that 's studded with lots and lots of rhubarb. Simply chop the rhubarb, and mix it with flour, sugar, nutmeg and beaten eggs. Then pour the mixture into a pastry shell and bake until it 's set. Cool and serve with springs of fresh mint.

This recipe makes a 10-inch pie that 's packed with rhubarb and sugar. The rhubarb is diced, piled into a prepared crust and covered with a vanilla custard mixture. The top crust is popped on and the pie is baked in a hot oven for an hour.

Three generations have been savoring this wonderfully delicious pie and it 's no wonder. With its rhubarb filling and crumbly sugared cornflake topping, it bakes up juicy, sweet and crunchy.

Lots of rhubarb and sugar go into this sweet and juicy pie. Combine the sliced rhubarb with sugar, flour and a smidgen of nutmeg, and pile the mixture into a prepared crust. Dot with butter, cover with a round of pastry and bake.

For this simply delicious rhubarb pie, fresh rhubarb is chopped, sprinkled with sugar and a bit of flour, and combined with an egg. The filling is spooned into a pastry crust, dotted with butter and enclosed in a top crust. If you use a glass pan, the pie can be baked in the microwave and then browned in the oven.

This pie has a wonderful flavor and is unlike those on the site, it does not contain tapioca. It is an old recipe and is easily made. Using young rhubarb makes this recipe unbeatable in taste and texture. I am frequently asked for this recipe.
